What is the difference between white chocolate, dark chocolate, and milk chocolate?

 

CRIMINAL CONFECTIONS by Colette London follows Hayden Mundy Moore, an expert on all things chocolate. It’s her job to help clients develop new products, revamp recipes, and make everything a little more delicious.

 

As a chocolate expert, Hayden knows everything there is to know about chocolate. If you’re thinking about becoming a chocolate expert yourself, here’s a quick lesson:

 

Chocolate comes from cocoa beans. The beans are harvested, ground-up, and then liquefied to make chocolate liquor. From here, cocoa solids and cocoa butter are formed, combining these two products differently is how different types of chocolate are created.

 

Dark Chocolate

 

Dark chocolate is made from a higher percentage of cocoa solids, which gives it a bitter taste. Sugar and cocoa bean powder are also added. To be considered dark chocolate the ingredients need to be at least 70% cocoa.

 

Milk Chocolate

 

Milk chocolate, as its name suggests, contains milk and a smaller percentage of cocoa solids and cocoa butter.

 

White Chocolate

 

White chocolate doesn’t contain any cocoa solids, only cocoa butter. Its ingredients can consist of 35% cocoa at maximum.  Most people don’t consider white chocolate a ‘real’ chocolate, because it doesn’t contain any cocoa solids, only the cocoa aroma from the cocoa butter.
